Born in the sugar cane fields of colonial Cuba, Aguardiente —
firewater — is the raw, unaged spirit distilled directly from
fermented cane juice. Fiercer than rum, closer to the earth.
The Canchánchara dates back to the Ten Years' War (1868), when Cuban
mambises mixed it with wild honey and lime to fuel the resistance.
Our version adds a whisper of Palo Santo — sacred wood, resinous
and warm, alongside the mineral brine. This is history you drink.
·Mineral Brine — salt enhances every flavour in the glass
✦Served with smoking Palo Santo — lifted tableside, glass inverted over the smoke

Profile
Raw cane spirit infused with Ají Amarillo — fruity heat, golden colour.
Tamarind honey adds deep, acidic sweetness that bridges the firewater
and the lime. Simple, ancient, alive. Served over ice, stirred slow.
